Mango Coconut Panna Cotta

For the Mango Layer:

2 ripe mangoes, peeled, pitted, and diced

100ml coconut milk (good quality)

2 tablespoons honey

1 teaspoon gelatin

2 tablespoons warm water


For the Coconut Panna Cotta Layer:

200ml coconut milk

200ml heavy cream

50g sugar

1 teaspoon vanilla extract

2 teaspoons gelatin

2 tablespoons warm water


For Garnish (Optional):

Fresh mango slices

Shredded coconut

Mint leaves




For the Mango Layer:

  1. In a blender or food processor, combine the diced mangoes, coconut milk, and honey (or maple syrup). Blend until you have a smooth mango puree.
  2. In a separate small bowl, sprinkle the gelatin over warm water and let it sit for a few minutes to soften.
  3. Heat the mango puree in a saucepan over low heat until it’s warm, but not boiling. Remove from heat.
  4. Add the softened gelatin to the warm mango puree and stir until the gelatin is completely dissolved.
  5. Divide the mango mixture equally into the serving glasses or molds. Place them in the refrigerator to set while you prepare the coconut layer.

For the Coconut Panna Cotta Layer:

  1. In a separate saucepan, combine the coconut milk, heavy cream, sugar, and vanilla extract. Heat the mixture over medium heat, stirring until it’s hot but not boiling.
  2. In another small bowl, sprinkle the gelatin over warm water, let it soften, and then add it to the warm coconut mixture. Stir until the gelatin is fully dissolved.
  3. Allow the coconut mixture to cool for a few minutes.
  4. Carefully pour the coconut mixture on top of the set mango layer in each glass or mold.
  5. Return the glasses or molds to the refrigerator and allow them to set for at least 4 hours, or overnight.

For Garnish (Optional):

Before serving, garnish the Mango Coconut Panna Cotta with fresh mango slices, shredded coconut, and mint leaves for a delightful presentation.
