Grilled Spring Lamb Chops with Mint Gremolata

Ingredients:

 

For the Lamb:

8 spring lamb chops

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and black pepper, to taste

 

For the Mint Gremolata:

1/2 cup fresh mint leaves, finely chopped

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

2 tablespoons extra-virgin olive oil

Salt and black pepper, to taste

 

Instructions:

 

For the Lamb:

  1. In a bowl, mix the olive oil, minced garlic, dried oregano, salt, and black pepper.
  2. Place the lamb chops in a shallow dish and pour over the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours to let the flavours infuse.
  3. Preheat your grill to medium-high heat. Oil the grill to prevent sticking.
  4. Remove the lamb chops from the marinade and allow any excess to drip off.
  5. Grill the lamb chops for about 3-4 minutes on each side for medium-rare, or adjust the cooking time to your preferred level.
  6. Remove the lamb chops from the grill and let them rest for a few minutes before serving.

For the Mint Gremolata:

  1. In a bowl, combine the finely chopped fresh mint leaves, minced garlic, lemon zest, lemon juice, and extra-virgin olive oil.
  2. Season the gremolata with salt and black pepper to taste and stir well.

To Serve:

 

  1. Arrange the grilled lamb chops on a serving platter.
  2. Spoon the mint gremolata over the lamb chops or serve it on the side as a dipping sauce.
