Lemon Herb Grilled Chicken Pasta Salad

Ingredients:

    • 2 boneless, skinless chicken breasts
    • 2 tablespoons olive oil

      • 400g fresh pasta (like fusilli, penne or linguini)
      • 1 cup cherry tomatoes, halved
      • 1/2 cup pitted kalamata olives, sliced
      • 1/2 cup fresh basil leaves, torn
      • 1/4 cup fresh parsley, chopped
      • 1/4 cup fresh mint, chopped
      • Zest of 1 lemon
      • 2 tablespoons capers (optional)

Dressing:

    • 1/3 cup extra-virgin olive oil
    • 3 tablespoons fresh lemon juice
    • 1 clove garlic, crushed
    • 1 teaspoon honey
    • Salt and pepper, to taste

Instructions:

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Subsequently, add the chicken breasts and marinate for at least 30 minutes.
