  • 1 medium pumpkin, peeled and chopped (Source: Camberwell Fruit and Veg)
  • 1 onion, chopped (Source: Camberwell Fruit and Veg)
  • 3 garlic cloves, minced (Source: Camberwell Fruit and Veg)
  • 1 tsp ground cumin
  • 1 tsp ground coriander 
  • 1 tsp paprika
  • 4 cups vegetable stock 
  • 1 can coconut milk
  • Olive oil (Source: Nick & Sue’s Gourmet Deli)
  • Salt and pepper to taste 
  • Fresh coriander for garnish 


  1. Preheat the oven to 200°C.
  2. Toss the pumpkin with olive oil, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until tender.
  3. In a large pot, sauté the onion and garlic in olive oil until soft.
  4. Add the roasted pumpkin, spices, and vegetable stock. Bring to a boil, then simmer for 15 minutes.
  5. Stir in the coconut milk and blend until smooth.
  6. Adjust seasoning and serve with fresh coriander.
