Royal Dukka Shakshuka Eggs

INGREDIENTS

  • Royal dukka
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, seeded and diced
  • 4 garlic cloves, finely chopped
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • ¼ teaspoon chili powder
  • 1 500g can whole peeled tomatoes
  • 6 large eggs
  • Salt
  • Pepper
  • 1 small bunch fresh coriander, chopped
  • 1 small bunch fresh parsley, chopped

 

METHOD

  1. Place a large pan on medium heat and pour in oil. Once hot, add the chopped bell pepper and onion then cook for 5 minutes, or until the onion is soft. Add garlic and spices then cook for an additional minute until aromatic.
  2. Pour the can of tomatoes into the pan and stir to combine all ingredients. Season the mixture with salt and pepper, then bring to a simmer.
  3. Use a large spoon, make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.
  4. Garnish with chopped coriander, parsley and royal dukka then serve and enjoy.
