INGREDIENTS
- Royal dukka
- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 red bell pepper, seeded and diced
- 4 garlic cloves, finely chopped
- 2 teaspoons paprika
- 1 teaspoon cumin
- ¼ teaspoon chili powder
- 1 500g can whole peeled tomatoes
- 6 large eggs
- Salt
- Pepper
- 1 small bunch fresh coriander, chopped
- 1 small bunch fresh parsley, chopped
METHOD
- Place a large pan on medium heat and pour in oil. Once hot, add the chopped bell pepper and onion then cook for 5 minutes, or until the onion is soft. Add garlic and spices then cook for an additional minute until aromatic.
- Pour the can of tomatoes into the pan and stir to combine all ingredients. Season the mixture with salt and pepper, then bring to a simmer.
- Use a large spoon, make small wells in the sauce and crack the eggs into each well. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.
- Garnish with chopped coriander, parsley and royal dukka then serve and enjoy.
