Ricotta Dumplings with Asparagus and Green Garlic

Ingredients:

  • 1/2 Cup ricotta
  • 1 Cup grated parmesan
  • 1 Egg
  • 1 Yolk (room temp)
  • 2 1/4 Tsp kosher salt
  • 1/4 Cup flour
  • Spring onions
  • Asparagus
  • Chicken stock
  • Butter
  • Chives
  • Lemon juice
  • Olive oil
  • Black pepper

Method:

  • Mix ricotta, parmesan, egg, yolk and kosher salt in a food processor. Add the all purpose flour in the mixture and blend until mix.
  • Flour a parchment paper and form the ricotta mixture like a dumpling in a tray.
  • Cook the dumpling in a boiling water with salt for 4 mins,
  • In a pan, pour the chicken stock and bring into a simmer.
  • Transfer the dumplings in the pan and add the spring onions, cook for 3 minutes. Add the asparagus, towards the end, add salt. pepper and chives. Serve and drizzle with olive oil
