INGREDIENTS
- 250g trimmed green beans
- 3 tablespoons room-temperature unsalted butter
- 2 teaspoons miso
- 2 tablespoons vegetable oil
- Kosher salt
- Freshly ground black pepper
- 2 teaspoons minced shallot
- 1 garlic clove, minced
- 1/4 cup of sake
- 1/4 cup vegetable broth (or water)
- Sesame seeds (optional)
METHOD
- In a large pot of salted boiling water, cook the green beans until crisp-tender then drain and transfer to a bowl of ice water to cool. Once cool, drain and set aside.
- Whisk together the butter and miso in a small bowl. In a large pan, heat vegetable oil over medium-high heat then add beans. Season them with salt and pepper and toss to coat. Stir in the shallots and garlic and cook for 1 minute. Add sake then cook until almost evaporated. Add vegetable broth or water, then cook until sauce thickens and reduces by half.
- Lower the heat to medium then add the whipped miso butter. Stir through the beans until a creamy sauce forms. Garnish with sesame seeds, then serve and enjoy!
