  • Zest and juice of 1 lemon
  • Salt and pepper, to taste

For the Mango Salsa:

  • 2 ripe mangoes, diced
  • 1 small red onion, finely chopped
  • 1 red chilli (optional), finely chopped
  • 1/2 cup fresh coriander, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions:

  1. Marinate the Prawns: In a large bowl, combine olive oil, minced garlic, lemon zest, and juice. Add prawns and toss to coat evenly. Season with salt and pepper. Let marinate for 15-20 minutes.
  2. Prepare Mango Salsa: In a medium bowl, mix together diced mangoes, red onion, chilli (if using), coriander, and lime juice. Season with salt and pepper. Set aside to let the flavours meld.
  3. Grill the Prawns: Heat your grill to medium-high. Place prawns on the grill and cook for about 2-3 minutes on each side or until they turn pink and are cooked through.
  4. Serve: Arrange the grilled prawns on a platter and spoon the mango salsa over the top or serve it on the side. Garnish with extra coriander leaves and lemon wedges.
