Ingredients:
  • 500g raclette cheese (from Nick & Sue’s Gourmet Deli)
  • 500g small potatoes, boiled
  • 1 small jar of pickled gherkins
  • 1 small jar of pickled onions
  • Assorted charcuterie (e.g., ham, salami)
  • Freshly ground black pepper
  • Baguette or crusty bread

Instructions:

  1. Prepare the Cheese and Potatoes: Slice the raclette cheese into thin pieces. Boil the potatoes in salted water until tender, then drain and keep warm.
  2. Set Up the Raclette Grill: If you have a raclette grill, preheat it according to the manufacturer’s instructions. Alternatively, you can use a cast-iron skillet on a stovetop.
  3. Melt the Cheese: Place the cheese slices on the raclette grill or in the skillet. Heat until the cheese is bubbly and melted.

  • 1/2 cup chicken or vegetable broth
  • 1 tbsp olive oil
  • Freshly ground black pepper

Instructions:

  1. Preheat the Oven: Preheat your oven to 180°C (350°F).
  2. Cook the Pasta: Boil the fresh pasta in salted water until al dente. Drain and set aside.
