INGREDIENTS:
2 tbsp maple syrup
2 tbsp olive oil
2 tbsp smokey barbecue sauce
2 tbsp ketchup
2 tbsp apple cider vinegar
2 tsp dijon mustard
3 tsp smoked paprika
2 tsp garlic powder
2 tsp onion powder
1 tsp cracked black pepper
1kg chicken pieces, bone-in (wings, drumsticks, Marylands)
METHOD:
- Combine maple syrup, olive oil, barbecue sauce, ketchup, apple cider vinegar, mustard, paprika, garlic powder, onion powder and pepper in a glass or ceramic dish. Season with salt.
- Preheat the grill on your BBQ.
- Oil and season your chicken pieces.
- Place your chicken pieces on the hot grill. Cook for between 20 and 30 minutes, rotating regularly.
- When your chicken is nearly cooked through, baste generously with the bbq sauce, and keep on the heat until the sauce caramelizes.
- Take off the heat and let rest for 5 minutes before serving with your favourite sides.
