Barbecued Chicken Pieces

INGREDIENTS:

2 tbsp maple syrup

2 tbsp olive oil

2 tbsp smokey barbecue sauce

2 tbsp ketchup

2 tbsp apple cider vinegar

2 tsp dijon mustard

3 tsp smoked paprika

2 tsp garlic powder

2 tsp onion powder

1 tsp cracked black pepper

1kg chicken pieces, bone-in (wings, drumsticks, Marylands)

METHOD:

  1. Combine maple syrup, olive oil, barbecue sauce, ketchup, apple cider vinegar, mustard, paprika, garlic powder, onion powder and pepper in a glass or ceramic dish. Season with salt.
  2. Preheat the grill on your BBQ.
  3. Oil and season your chicken pieces.
  4. Place your chicken pieces on the hot grill.   Cook for between 20 and 30 minutes, rotating regularly.
  5. When your chicken is nearly cooked through, baste generously with the bbq sauce, and keep on the heat until the sauce caramelizes.
  6. Take off the heat and let rest for 5 minutes before serving with your favourite sides.
