Balsamic roasted brussel sprouts with crispy pancetta

  • 400g brussels sprouts
  • 200g pancetta
  • 1 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil



  1. Preheat the oven to 180C. Combine brussels sprouts, brown sugar, balsamic vinegar (1 tbsp balsamic vinegar) and olive oil in a roasting tray. Season well, turning the brussels sprouts with tongs to generously coat in the balsamic vinegar.
  2. Place the tray in the oven and cook for 15 minutes, turning the brussels sprouts occasionally. Remove the tray from the oven when they are tender and caramelised.
  3. Heat a large frying pan over medium heat and in batches add pancetta and cook until browned and crisp. Remove to a paper-towel-lined plate and let drain briefly.
  4. Toss together the brussels sprouts and the crispy pancetta, serve and enjoy.
