INGREDIENTS
- 400g brussels sprouts
- 200g pancetta
- 1 tbsp brown sugar
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
METHOD
- Preheat the oven to 180C. Combine brussels sprouts, brown sugar, balsamic vinegar (1 tbsp balsamic vinegar) and olive oil in a roasting tray. Season well, turning the brussels sprouts with tongs to generously coat in the balsamic vinegar.
- Place the tray in the oven and cook for 15 minutes, turning the brussels sprouts occasionally. Remove the tray from the oven when they are tender and caramelised.
- Heat a large frying pan over medium heat and in batches add pancetta and cook until browned and crisp. Remove to a paper-towel-lined plate and let drain briefly.
- Toss together the brussels sprouts and the crispy pancetta, serve and enjoy.
