Meet Craig, one of the owners of Kingfisher Seafood, a hub of fresh catches and seafood knowledge within in Camberwell Fresh Food Market. We spent five minutes chatting with Craig, who’s spent almost 30 years navigating the Market; the past six of those as Kingfisher’s owner, getting to know a little bit more about him.
1. How long have you been at the Market?
I’ve been part of Camberwell Fresh Food Market for roughly 28 years, and I’ve proudly worn the hat of Kingfisher Seafood’s owner for the last six of those.
2. What’s something your customers may not know about you?
Well, here’s a little tidbit: my alarm clock goes off at 3 in the morning, so I can head straight to the wholesale market and handpick the freshest catch of the day, day in and day out.
3. What’s the most unique thing you’ve ever seen at the Market?
The most unforgettable sight would have to be the Lunar New Year Dragon making its grand appearance through the Market. It was fun and intense—so loud and vibrant that it left a lasting impression on everyone.
4. Do you have a favourite Market memory/ experience?
Without a doubt, my favourite Market memory has to be witnessing the generations of families strolling through our stalls. It also makes me proud to see my dedicated staff and family members working tirelessly during the Christmas rush, ensuring everyone enjoys their festive feasts.
5. What’s the most common thing customers ask you for?
Our customers often seek out fresh, local Australian and New Zealand produce. It’s a testament to our commitment to quality and sourcing the best seafood.
6. What’s your favourite food hack or tip you can share?
When it comes to cooking fish, my advice is to keep it simple. Don’t overcomplicate things with a long list of ingredients. Let the natural flavours of the fish shine through, and you’ll be pleasantly surprised.
7. What do you love cooking the most?
Sides of salmon are my absolute favourite, especially when we have family and friends over. The combination of perfectly cooked salmon and good company is hard to beat. I’m also a big fan of whipping up garlic prawns and octopus dishes.
8. When you go out for dinner, what do you choose?
As a celiac, I have to be cautious with my choices. Still, my go-to pick is slow-cooked lamb shoulder (provided it’s gluten-free).
10. What do you love most about being part of the Market?
Being part of the Market has given me the chance to build incredible friendships with customers over the years. Our loyal customer base is simply fantastic, and their unwavering support is what makes our time here at Kingfisher Seafood so rewarding.
