We spent five minutes delving into the world of Jay, the maestro behind the espresso machine and the proud owner of Little Pony Goes to Market, the Market’s favourite caffeine hangout.  We delve into his experiences in the market, his passion for crafting the perfect cup of coffee, and his joy for crafting the ultimate chow mein.

How long have you been at the Market?

I have been part of the Camberwell Fresh Food Market community for six years. It’s been quite a journey!

What’s something your customers may not know about you?

I am obsessed with creating the perfect coffee shot.  Each morning, I test and calibrate the coffee machine to ensure that every shot of espresso created is perfect.

It’s a little behind-the-scenes ritual that guarantees the perfect cup of coffee that our customers have come to expect.

What’s the weirdest thing you’ve ever seen at the Market?

The Camberwell Fresh Food Market is full of surprises! One of the most peculiar things I’ve ever encountered here is the sight of a colossal sawfish’s tail. It was displayed in Kingfisher Seafood’s display fridge, right next to my stall.

This remarkable tail resembles something out of a mermaid’s tale, which was very unexpected!

What’s the most common type of coffee customers ask you for?

Without a doubt, the most requested coffee here at the Market is the classic latte. It seems to be a universal favourite!

What’s your favourite food hack or tip you can share?

One food tip I swear by is the importance of getting the ratios right. Whether it’s the balance of spices in a curry or the mix of ingredients in a stir-fry, precision in measurements and proportions can make or break a dish. It’s the key to achieving that perfect harmony of flavours and textures.

What do you love cooking the most?

Among the many dishes I enjoy preparing, my absolute favourite has to be chow mein. There’s something special about the sizzling stir-fried noodles, fresh veggies, and savoury sauces merging together that just makes it a delightful dish to cook and enjoy.

What do you love most about being part of the Market?

What I love most about being a part of the Camberwell Fresh Food Market is the opportunity to interact with people.   I love engaging with customers and hearing about their day. Little Pony Goes to Market is not just about serving coffee; it’s about being a part of a vibrant, close-knit community and making every visit to the market a memorable experience.
