The intoxicating scent of ripe peaches, apricots, nectarines, and mangoes, screams SUMMER to us!
Who doesn’t love stone-fruit season? Peaches are one of our personal favourites; and while they’re divine on their own, we thought we’d share our other top three ways to dish them up!
The flavours in your poaching liquid will infuse your peaches; so, make sure to use some of your favourite spices to get it just right.
Creating a light honeyed syrup is a great way to begin. Start with 500mls of sweet white wine, two tablespoons of light honey, and a vanilla pod and build from there. Other things to try include cinnamon sticks, cloves and even lemon rind.
Peel your peaches before submersing them in your poaching liquid; let them simmer away for around 15 minutes before removing them with a slotted spoon. Serve with vanilla ice cream or double cream!
That’s right, peaches grilled on the barbecue are a sure-fire dessert winner in the warmer months.
Simply cut them in half and remove the stone. Brush the flesh with either coconut oil or a little butter before gently placing them on the grill.
They won’t take long and should be ready to remove within five minutes.
To serve, simply dish up with your favourite Greek yoghurt, a scattering of toasted macadamia nuts and coconut, and a drizzling of honey.
Simple, tasty, delicious (and dare we say, even healthy?!).
Smoothies are a delicious way to start the day. And while the trusty banana smoothie is one of our all-time favourites, Summer means we can mix it up and play with our flavours!
Try adding a combination of coconut milk (about a cup), a whole ripe peach (stone removed!), half a banana, a tablespoon of Greek yoghurt, a drizzling of maple syrup, and some ice cubes into your blender. Enjoy!
